Run by 3 families, winemaker William (Bill) Downie, Chef Trevor Perkins and winemaker Pat Sullivan are well known names in the food and wine industry. They are passionate about producing organic foods with locally sourced seasonal ingredients at the peak of their season. They choose to support local growers and have developed relationships with food producers throughout the Gippsland region. West Gippsland is a region rich with good soil and a cool climate that supports the growth of high quality produce and a diverse variety of grapes for their wines.

The Hogget Kitchen Menu

Absolutely central to the Hogget Kitchen menu is the strong emphasis on local and seasonal food for guests dining experience. We prepare all the meats and do all the carving and butchering ourselves in-house – ensuring the best possible cuts of meat and the least possible amount of wastage.

All the pickling, bottling, charcuterie, smoking, brining and more is also done by hand in-house – skills we are passing on to our staff as we work preserving the techniques for future generations of chefs.
